For them, wine antioxidants help control a protein, endothelin 1 (ET 1), which is involved in the formation of early signs of arterial disease, such as the fatty layers on the walls of the arteries. The researchers also found that, among red wines, Cabernet Sauvignon types are the champions in inhibiting ET - 1 production.
